Grilled Salmon with Ginger Dip Recipes


SERVES 4

  • 4 SALMON FILLETS, EACH WEIGHING ABOUT 175G (60Z), SKINNED

  • 3 TABLESPOONS LIGHT SOY SAUCE

  • 1 TABLESPOON DRY SHERRY

  • 2.5cm (1IN) PIECE FRESH GINGER, PEELED AND CUT INTO THIN STRIPS

  • FRESHLY GROUND BLACK PEPPER

  • 2 TABLESPOONS SWEET SHERRY

  • 4 SPRING ONIONS, SHREDDED, TO GARNISH

  • LIGHTLY COOKED ASPARAGUS TIPS, TO SERVE (OPTIONAL)

  1. Using a sharp knife, lightly score top of salmon fillets in diagonal lines, taking care not to slice all the way through.

  2. Place salmon in a shallow dish. Mix together 2 tablespoons soy sauce, dry sherry and ginger strips and spoon over salmon. Cover and refrigerate for 1 hour.

  3. Remove salmon from marinade, season with pepper and place on the oiled barbecue rack. Cook for 2-3 minutes on each side.

  4. Meanwhile, make dip by mixing together sweet sherry and remaining 1 tablespoon soy sauce.

  5. Drain cooked salmon on absorbent kitchen paper and place on serving plates. Garnish with shredded spring onions and serve with dip, accompanied by asparagus tips if desired.
