Easy Salmon fillet on Radish Salad Recipes

Easy Salmon fillet on radish salad recipes

  • 8 salmon fillet strips 80 g / 3 oz each

  • 30g butter / 1 oz

  • 2 bunches of radishes

  • 1 bunch of chives

  • 4 tbsp cider vinegar

  • 1 tsp powdered icing sugar

  • 1 mocha spoon Dijon mustard

  • 6 tbsp sunflower oil

  • Sea salt

  • Freshly ground white pepper

  1. Remove the radish leaves and cut the radishes into thin slices. Marinate the radishes in a vinaigrette of cider vinegar, powdered sugar, Dijon mustard, sea salt, white pepper and sunflower oil, and mix in the finely chopped chives. Arrange on plates.

  2. Heat and froth the butter in a non-stick pan and add the salmon fillets. Season with sea salt and saute each side for 1 minute. The salmon should remain moist inside. Place on the bed of radish salad and serve.

Serve either with fresh white bread or with small boiled potatoes. The slightly sharp radish salad tastes wonderful with the delicate salmon.
