Best Grilled Salmon Recipes



  • 21/2-3 lb / 1.25-1.5 kg /21/2-3 lb whole salmon, cleaned weight

  • Juice of 1 lemon

  • 1 tbsp olive oil

  • Salt and pepper

  • 1/4 cup /30-40g / 1-11/2 oz fresh dill, chopped

  • 1/4 cup/60g /2 oz butter

  • Dijon mustard

  • Oil or butter to grease foil

  • Lemon wedges

  1. The foil is used as a cradle, rather than as a wrap. It should be long enough to cradle the whole fish, with a bit at either end for ease in handling. Grease the foil thickly with hotter (or brush it all over with olive oil) to prevent sticking, and poke holes in it with a skewer so that the smoke can reach the fish.

  2. Season the fish inside and out with lemon juice, olive oil, salt and pepper. Put three or four sprigs of dill in the cavity and place the fish on the foil. Leave to stand for 20 minutes for the flavors to mingle.

  3. Cook over a hot fire. After five minutes, carefully turn the fish in the foil cradle, and repeat at 5-minute intervals. The fish should be cooked in 20-30 minutes in total, depending on how you like your salmon.

  4. Beat together the chopped dill, the butter (soften it in the microwave) and the mustard (add more to taste); this, and the lemon wedges, accompany the fish. Rather than trying to lift it out of the foil when it is cooked, just roll it onto the serving platter.
