Aromatic Grilled Salmon Recipes


SERVES 6

  • 6 MIDDLE-CUT SALMON FILLETS, EACH WEIGHING ABOUT 175G (60Z) AND 2CM (3/4IN) THICK

  • SALT AND FRESHLY GROUND BLACK PEPPER

  • FLOUR FOR COATING

  • 115G (4oz) BUTTER

  • HANDFUL FRESH WINTER SAVORY OR 1-2 TABLESPOONS DRIED WINTER SAVORY, MOISTENED

  • 6 TEASPOONS LUMPFISH CAVIAR

  • WINTER SAVORY OR TARRAGON, TO GARNISH

  1. Rinse salmon and pat dry on absorbent kitchen paper. Season to taste with salt and pepper. Dip in flour and shake off surplus.

  2. Melt butter and brush over salmon steaks. Place in a rectangular hinged basket. Sprinkle winter savory over the coals when they are hot.

  3. Barbecue fish on rack over hot coals for 4-5 minutes on each side, basting occasionally with melted butter. If fillets start to brown too quickly, reduce heat or move basket to side of barbecue. Fillets are cooked when it is easy to move centre bone.

  4. Serve salmon fillets sprinkled with lumpfish caviar and garnished with winter savory or tarragon leaves.
