Gingered Rum and Molasses Salmon - Salmon Dinner Recipes

 

Serves 4.

  • 2 cup buttermilk

  • 1/14 cup dark rum

  • 1/2 cup molasses

  • 18-oz. boneless salmon fillet

  • 1/4 c. fresh ginger, cut into 1-inch pieces

  • 2 cup seasoned flour

  • 4 cup grits

  • 2 cup vegetable oil

  • 2 tsp. fresh limejuice

  • 2 limes, cut in half

  1. In a glass or stainless steel bowl, combine buttermilk, rum and molasses. Add salmon and fresh ginger. Cover and refrigerate overnight.
     

  2. To prepare, remove fish and dredge in seasoned flour. Place on a rack to dry for 10 minutes. Dip fish in marinade and dredge in grits. Return to rack for 3 minutes. Heat vegetable oil to 350 in an electric skillet. Add fish to oil and deep-fry until golden brown. Remove and place on a paper-towel-lined serving plate. Splash with lime juice. Serve this salmon dinner recipes with fresh lime halves.
