Salmon Croquettes or Salmon Patties


Serves 4

  • 3 large potatoes, cooked and mashed

  • 1 onion, grated

  • 440g/14 oz canned pink salmon, drained and flaked

  • 1 teaspoon Dijon mustard

  • 2 tablespoons mayonnaise

  • 1 egg, beaten

  • Freshly ground black pepper

  • 200 g/02 oz cheese-flavored biscuits, crushed

  • Vegetable oil for deep-frying

  1. Place pink salmon, potatoes, onion, salmon, mustard, mayonnaise, egg and black pepper to taste in a bowl and mix well to combine. Shape mixture into croquettes and roll in crushed biscuits to coat. Place croquettes on a plate lined with plastic food wrap and refrigerate for 15 minutes.

  2. Heat oil in a large deep saucepan until a cube of bread dropped into it browns in 50 seconds. Add croquettes and cook over a medium heat for 4-5 minutes or until golden. Drain on absorbent kitchen paper and serve this salmon patties immediately.
