Easy Satay Salmon Patties

EASY SATAY SALMON PATTIES


Serves 6

  • 440 g/14 oz canned red salmon, drained and flaked

  • 3 potatoes, cooked and mashed

  • 2 tablespoons flour

  • 1 clove garlic, crushed

  • 1 teaspoon grated fresh ginger

  • 1 teaspoon grated lemon rind

  • 1 small red chili, seeded and finely chopped

  • 2 teaspoons soy sauce

  • 1 teaspoon curry paste (vindaloo)

  • Pinch chili powder

  • 1/4 teaspoon ground cumin

  • 2 tablespoons finely chopped unsalted

  • Roasted peanuts

  • Freshly ground black pepper

  • 1/2 cup/60 g/2 oz sesame seeds

  • 1/2 cup/60 g/2 oz dried breadcrumbs

  • 1 tablespoon peanut (groundnut) oil

  1. Place salmon, potatoes, flour, garlic, ginger, lemon rind, chili, soy sauce, curry paste (vindaloo), chili powder, cumin, peanuts and black pepper to taste in a large bowl and mix well to combine.

  2. Place sesame seeds and breadcrumbs in a shallow dish and mix to combine. Shape salmon mixture into twelve patties and roll in sesame seed mixture. Place patties on a plate lined with plastic food wrap, cover and refrigerate for 30 minutes.

  3. Heat oil in a nonstick frying pan and cook patties for 3-4 minutes each side or until golden and heated through. Remove patties from pan and drain on absorbent kitchen paper.

  4. This easy satay salmon patties are now ready to serve!
