Simple Potted Cooked Salmon with Dill Recipes


This sophisticated starter would be ideal for a dinner party.


Serves 6


INGREDIENTS

  • 350 g/12 oz cooked salmon, skinned

  • 90 g/31/2 oz/6 tbsp butter, softened rind and juice of 1 large lemon

  • 5 ml/1 tsp chopped fresh dill

  • 75 g/3 oz/3/4 cup flaked almonds, roughly chopped

  • Salt and freshly ground black pepper

  • Dill sprigs, to garnish

  • Crudités, to serve

  1. Flake the salmon into a bowl and then place in a food processor together with the butter, the lemon rind and juice, the dill and seasoning. Process until quite smooth.

  2. Mix in the chopped flaked almonds. Check the seasoning and add salt and freshly ground black pepper to taste. Pack the mixture into six small ramekins.

  3. Chill the pâté before serving, garnished with sprigs of dill. Serve with a selection of crudités.
