Spicy Smoked Salmon Tartar in Cucumber Cup

Serve: 6


  • 1/4 pound of sliced smoked salmon

  • 1 European cucumber

  • 1 minced and large jalapeno chili

  • 1 bunch fresh cilantro

  • 1 shallot, finely diced

  • 2 tablespoons extra virgin olive oil

  • 1 teaspoon of chili paste with garlic

  • Juice of 1/2 lime

  • Freshly ground pepper and kosher salt


  1. Trim off both ends of the cucumber.

  2. Peel off the skin of the cucumber by using a knife or score the skin of the cucumber creatively with a fork.

  3. Cut the cucumber into 2 inch thick slices and keep it refrigerated while preparing the tartar.

  4. Cut the salmon slices to small pieces, around 1-inch squares.

  5. Grind the salmon with food grinder or chop the salmon slices into fine pieces.

  6. Separate out 18 pieces of nice looking cilantro leaves, keep these aside and chop the remainder.

  7. Mix the chopped cilantro and grinded salmon together in a bowl together with the jalapeno, olive oil and lime juice.

  8. Taste the mixture and add chili paste, salt and pepper accordingly.

  9. Cover the mixture and chill it for at least an hour.

  10. Scoop the cucumber with a melon bailer to form a bowl shape, make sure there is a solid bottom.

  11. Place a teaspoon of the tartar mixture into each cucumber cup.

  12. Garnish with the cilantro leaves that were kept previously.
