Smoked Salmon with Mango Salsa

Serve: 6


  • 1/4 pound piece smoked salmon, cut into 1/4 inch dice

  • 1 large, ripe mango, cut into 1/4 inch dice

  • 1 ripe Hass avocado, halved, pitted, peeled, and cut into 1/4 inch dice

  • 1/2 bunch fresh cilantro

  • 1/4 cup diced vine-ripened tomato

  • 2 tablespoons finely diced purple onion

  • 2 jalapeno chilies, minced

  • 2 tablespoons extra virgin olive oil

  • Juice of 1 lime

  • Salt and freshly ground pepper

  • 18 premade corn cups, baked according to package directions


  1. Keep 20 pieces of nicely looking cilantro sprigs for garnish.

  2. Chop the rest of the cilantro sprig into small pieces.

  3. Place the chopped cilantro in a bowl along with the salmon, tomato, mango, avocado, onion, chilies and lime juice.

  4. By using a rubber spatula, gently fold the ingredients together.

  5. Add salt and pepper together with the olive oil and season to taste and fold with the ingredient gently again.

  6. Prepare the corn cups according to the package direction.

  7. Spoon about 1 tablespoon of the salsa into each corn cup.

  8. Garnish with the cilantro tops that was reserved earlier.

Note: Try to get mangoes that is yellowish skin and blushing red, this would mean that the mangoes are ripe and would taste better.
