Roast Turbot Steaks, Crushed Potatoes and Smoked Salmon Sauce

ROAST TURBOT STEAKS, CRUSHED POTATOES AND SMOKED SALMON SAUCE


Turbot is one of the finest fish caught in the North Sea, and this recipe marries its meaty texture with strong flavors.


Serves 4

  • 4 x 150g turbot steaks

  • 1 tsp mustard powder

  • 1 tsp flour

  • 1 tbsp olive oil

  • 75g unsalted butter salt and pepper

  • 2 shallots, peeled and finely chopped

  • 1 tbsp white wine vinegar

  • 125ml dry white wine

  • 1 small bouquet garni (parsley, thyme, 1/2 bay leaf)

  • 1 clove of garlic, peeled and crushed

  • 150ml fish stock

  • 150ml chicken stock

  • 150ml double cream

  • 100g smoked salmon, finely chopped

  • 2 tomatoes, skinned, deseeded and roughly chopped

  • 2 tbsp chopped fresh parsley

  • 350g new potatoes

  • 2 tbsp creme fraiche

  • 1 tbsp finely chopped chives

  1. Preheat the oven to 200C/400F/gas mark 6. Mix together the mustard and flour. Trim the turbot and dip the bone side into the mustard mixture.

  2. Heat the oil with 50g butter. Dip the fish into the hot fat, mustard-side down. Season with salt and pepper. Color and turn over, but do not color the second side. Roast in the oven for 10 minutes, depending on the thickness of the fish, until cooked through.

  3. Meanwhile, sweat the shallot in 25g butter, but do not color. Add the white wine vinegar, white wine, bouquet garni and garlic, and reduce to a syrup.

  4. Add the fish and chicken stocks and reduce by half. Add the double cream and reduce by half again.

  5. Take the pan off the heat, add the smoked salmon, tomato and parsley, and season with salt and pepper.

  6. Scrub the potatoes, then cook them in salted water, drain and dry. Crush the potatoes with a fork, add the creme fraiche and chives, and season.

  7. Make a bed of potatoes in a ring and put the fish on top. Serve some sauce over and around the fish.
