Egg and Smoked Salmon Sandwiches


Serves 4

  • 8 eggs

  • 1/4 cup/60 ml/2 fl oz cream (double)

  • 1 tablespoon snipped fresh chives

  • Freshly ground black pepper

  • 60 g/2 oz butter

  • 4 slices bread

  • 4 slices smoked salmon

  1. Place eggs, cream, chives and black pepper to taste in a bowl and whisk to combine. Melt butter in a saucepan, add egg mixture and cook over a low heat, stirring gently, until egg mixture is set but still creamy.

  2. Top each slice of bread with a slice of salmon, then with scrambled eggs. Serve this Egg and Smoked Salmon Sandwiches immediately.
