Smoked Salmon with Blinis


Makes 25.

  1. Place 1 cup whole meal or white self-raising flour, 1 teaspoon sugar and a pinch of salt in a bowl. Make a well in the centre. Combine 2 lightly beaten eggs, 1 tablespoon melted butter and 2 cups warm milk.

  2. Whisk liquid gradually into flour and mix to a smooth batter. Heat a heavy-based non-stick frying pan and grease lightly with a little butter. Drop 2 teaspoons of batter in pan, making 4 or 5 blinis at a time.

  3. Cook until bubbles appear on the surface. Turn to brown other side. Transfer to plate. Cover and keep warm while cooking other blinis. Combine 100 g finely chopped smoked salmon with 250 g cottage cheese, 1/2 teaspoon lemon juice, 2 teaspoons grated onion and 1 teaspoon chopped chives.

  4. Serve on top of hot blinis and sprinkle with paprika.
