Coconut Salmon Steak Recipes

The salmon steak is marinated with spices and gently poached in coconut milk.

Serves 4


  • 10 ml/2 tsp ground cumin

  • 10 ml/2 tsp chili powder

  • 2.5 ml/1/2 tsp ground turmeric

  • 30 ml/2 tbsp white wine vinegar

  • 1.5 ml/1/2 tsp salt

  • 4 salmon steaks (about 175 g/6 oz each)

  • 45 ml/3 tbsp oil

  • 1 onion, chopped

  • 2 green chilies, seeded and chopped

  • 2 garlic cloves, crushed

  • 2.5 cm/1 in piece fresh root ginger, peeled and grated

  • 5 ml/1 tsp ground coriander

  • 175 ml/6 fl oz/3/4 cup coconut milk

  • Fresh coriander sprigs, to garnish

  • Spring onion rice, to serve

  1. Mix 5 ml/1 tsp of the ground cumin together with the chili powder, turmeric, vinegar and salt. Rub the paste over the salmon steaks and leave to marinate for about 15 minutes.

  2. Heat the oil in a frying pan and fry the onion, chilies, garlic and ginger for 5-6 minutes. Transfer to a food processor and process to a paste.

  3. Return the paste to the pan. Add the remaining cumin, the ground coriander and coconut milk. Bring to the boil and simmer for 5 minutes. Add the salmon steaks. Cover and cook for 15 minutes until the fish is tender. Serve with spring onion rice and garnish with fresh coriander.
