Broiled Salmon Steak Recipe

Miso gives an enchanting flavor to this dish.

  • 6 serving size salmon steaks (*)

  • 4oz (80g) shiro miso

  • 2 Tablespoon mirin

  • 2 Tablespoon dashi stock

  • 2 egg yolk

  • (*) Red snapper, scallops or other fish fillets can be also used.

  1. Broil or bake salmon steaks. In a 2-quart saucepan, mix miso topping ingredients except egg yolk and place over hot water. You can also put miso topping except egg yolk in top of double boiler. Place the top of double boiler over simmering water and stir gently.

  2. Add egg yolk and mix thoroughly until smooth and glossy.

  3. Baste broiled salmon steaks and broil until topping turns light brown.
