Baked sugar and spice salmon fillet recipes

Get the oven really hot before you start cooking this sizzling supper dish. Its got more than enough flavor to serve on its own, but if you want a contrasting sauce, try the Creme Fraiche and Herb Mayonnaise.

COOKING TIME: 10 minutes

  • 4 salmon fillets, each about 200 g (7 oz)

  • 3 tablespoons light muscovado sugar

  • 2 garlic cloves, crushed

  • 1 teaspoon cumin seeds, crushed

  • 1 teaspoon smoked or ordinary paprika

  • 1 tablespoon white wine vinegar

  • 2 tablespoons groundnut oil

  • Salt

  • Lemon or lime wedges, to serve

  1. Put the salmon fillets in a lightly oiled roasting tin. Mix together the sugar, garlic, cumin seeds, paprika, vinegar and a little salt.

  2. Using a dessertspoon spread the mixture all over the fish fillet so that it is thinly coated. Drizzle with the oil.

  3. Bake in a preheated oven, 220C (425F), Gas Mark 7, for 10 minutes or until the fish fillet is cooked through. Transfer to warm serving plates and serve this baked sugar and spice salmon fillet recipes garnished with lemon or lime wedges.
